Walt's 15 Minute Tacos
WHAT YOU
NEED:
- Courgette
- Mushrooms
- Olive oil
- 500g lean
mince beef
- Taco
shells
- Avocado
- Tomatoes
x2
- Spring
onion
- 1 clove of
garlic
- Lemon
juice
- Tobasco
- Coriander
leaves
- Ground
cumin
- Cottage
cheese
WHAT TO DO:
1. Chop up
all veges and avocado.
2. Crush
garlic.
3. Pre-heat
oven to 200c.
4. Heat half
the oil in a large frying pan on high.
5. Add the
mince and cook for 5 minutes until it Is all brown and not pink, stir as
needed.
6. Cook the
courgettes with the mince.
7. Place
tacos in oven or under the grill for 2-3 minutes.
8. While the
tacos are heating up combine mince, tomatoes, mushrooms, and spring onions in a
bowl.
9. Stir in
crushed garlic, lime juice, a bit of olive oil, tabasco, ground coriander and
cumin.
10. Put
mince into each shell.
11. Top with
sliced avocado and coriander and serve with cottage cheese.
