Stuffed Kumara
Gerry used
leftovers for his stuffed kumaras, but if you don’t have any, here’s what you
need:
- Chicken
- Cooked
bacon rashers
- Roasted
carrots
- Roasted
onions
- Parsley
- Pepper
- Kumara
WHAT TO DO:
1. Chop
kumara in half.
2. Bake in
oven for 40 minutes at 180.
3. Empty
the kumara out into a bowl, but keep the skins because you’re going to put the
stuffing back into these!
4. Place in
bowl and mash kumara.
5. Take
leftovers (make sure they’re chopped into small pieces) add to bowl, and mix in
well with mashed kumara.
6. Season
with pepper and spoon back into kumara skin.
7. Bake in
oven at 180 for another 10 minutes.
