Potato Salad
WHAT YOU NEED:
- 3 potatoes mashed and cooked with skin on for extra fibre
- 2 handfuls finely chopped parsley
- 1 cup of chopped green beans cooked
- 2 stalks of celery finely diced
- 2 hard boiled eggs chopped
- ½ cup of Slimmer’s Choice yoghurt
- Pepper to season
- 1 small red onion diced
WHAT TO DO:
1. Mix all the ingredients together and you’re done!
