Hash Browns
WHAT YOU NEED:
• 2 x large potatoes
• 2 x large kumera
• Leek
• Fresh thyme, chopped
• Olive oil spray
• Pepper
WHAT TO DO:
• Chop up leeks finely then cook on BBQ or in fry pan to soften them up for 5 minutes or so.
• Grate the kumera and potatoes and soak all the moisture up with some paper towels. It’s very important to get rid of as much water as possible otherwise your hash browns will be soggy.
• Mix cooked leek, kumera and potato in a bowl with the thyme and some pepper.
• Put little bit of oil on BBQ and add potato mixture pressing down firmly with a fish slice to form round shape about 2cm thick.
• Cook gently for 6 to 8 minutes on both sides. May take longer depending on the heat.
