WHAT YOU NEED:

Filling Ingredients:
- Shredded chicken from roast
- 2 cloves garlic
- Ginger
- Bunch of herbs
- 1 onion (sliced)
- 1 tbsp tomato paste in a tube
- 1 tsp soy sauce

Dough Ingredients:
- 2 cups flour (un-blenched, all purpose)
- ¾ cup just boiled water

Dipping Sauce:
- 1 small red chilli, seeds removed, finely chopped
- 2 tsp freshly grated ginger
- 2 tsp sesame oil
- 5 tbs (100ml) light soy sauce
- 2 tsp brown sugar

And someone older to help you out!

WHAT TO DO:

1. Start by combining all your filling ingredients in a bowl.
2. Put flour in a bowl and make a well in the centre.
3. Stir the flour as you add the just-boiled water – pour a steady stream.
4. Evenly moisten the flour.
5. Knead the dough – getting rid of the lumpy bits and bring to one mass. If dough doesn't come together very well, add a teaspoon at a time of more water.
6. Flour a surface and knead the dough for about 30 seconds. Then pop dough in zip-lock bag and expel the air – leave to rest at room temp for between 15 minutes and 2 hours.

To Make the Parcels:

1. Put the chicken filling in the dough and wrap it up.Scoop mix into a circular piece of dough, wet the circumference of it, fold wrapper in half, fold a pleat to the right at the top and pinch to seal it!
2. Fill a pot with 2 inches of water and put on the boil.
3. Put a cabbage leaf in the basket (stops the dumplings sticking to the basket)
4. Fill the baskets with the dumplings in a single layer, pop the lid on.
5. Put the basket over the simmering water (use oven mitts!!)
6. Let it steam for 15-20 mins.

To Make the Dipping Sauce:

Whisk together...

- 2 tsp freshly grated ginger
- 2 tsp sesame oil

- 2 tsp brown sugar
