Chilli Con Carne
WHAT YOU
NEED:
BASE:
- 5oog
mince beef
- Olive oil
- 1
teaspoon crushed garlic
- 4
tablespoon reduced fat sour cream
- 1-½ cups
of white rice
VEGES:
- 400g
canned tomatoes (watties)
- 400g tin
of beans – kidney or mixed (watties)
- 1 large
carrot, diced
- 2x
capsicum (1 red, 1 green), diced
- 1 tin of
watties kernel corn
- 1 onion,
diced
SEASONING
(CAN BE DRIED)
- Cumin
- Coriander
- Paprika
- Chili
powder
- Oregano
- 2
tablespoons Worcestershire sauce
WHAT TO DO:
Once you’ve
got that sorted, you’re going to want to get some rice going:
1. Into a
microwave safe container, measure one a half cup of rice per person.
2. Add 2 ½
cups of water to every 2 cups of rice you have.
3. Chuck on
a lid or some cling film and pop it in the microwave for about 8 mins.
4. Carefully
take it out and let it stand, and then fluff with a fork.
Next!
1. Heat a
little olive oil in pan and fry onion until soft and translucent.
2. Add
mince and cook until brown.
3. Add
tinned tomatoes, mixed veges, beans.
4. Add Worcestershire
sauce and all your other spices and seasoning – go crazy, do what you like.
