Chicken Meatball Soup
WHAT YOU
NEED:
For Meat
Balls:
- 500g
ground chicken breast
- 1/2
teaspoon ground black pepper
- 1 cup
bread crumbs
- 1 egg
(beaten)
For Soup:
-1
tablespoon vegetable oil
-1 cup
chopped onion
-1 1/2
teaspoons minced garlic
- 4 cups
water
- 4 cups of
chicken broth
- 1 1/2
cups sliced carrots
- 1 1/2
cups chopped celery
- 1 leek
(chopped)
- 1/2
teaspoon ground black pepper
WHAT TO DO:
1.First,
you’ve got to make your meatballs and here’s how:
- Using wet
hands, mix together ground chicken, pepper, bread crumbs and beaten egg. Shape
into small meatballs. Keep wetting hands if necessary.
- Place on
a lined baking tray and cook for 15 minutes at 200C.
2. Now you
need to make the soup:
- Sautee onion and garlic in a
pot.
- Add water, broth, carrots, leek
and pepper.
- Bring to the boil.
- Reduce heat and simmer for 15
to 20 minutes.
- Add meatballs after 10.
Now you are ready to serve it up
and enjoy!
